Many have attested to the greatness of this pancake mixture. I can hardly believe that I am about to share it with the world, but here we go…
Yield: This mix will feed a family of four with some leftover.
Mix dry ingredients in one bowl: 500 mL flour, 20 mL baking powder, 2 ml salt, 60 ml brown sugar.
Combine 500 mL of milk, 2 beaten eggs, 60 mL of vegetable oil and 20 mL of vanilla in a second bowl and whisk until smooth.
Gradually pour liquid ingredients into dry bowl while mixing with an electric mixer until all lumps are gone. Lumps are not good! Then pour in a 3/4 cup of fresh blueberries or Saskatoons and gently stir into mix.
Preheat a large frypan and place a pat of butter in the pan. Gradually increase the heat untill the butter is barely bubbling. Drop batter into pan in any size or shape you want, when the bubbles start to break on the surface of the pancake, they are ready to flip. Don’t be afraid to use extra butter in the pan (This is not a diet recipe by the way). Cook until golden brown. Serve with a sprinkle of baking sugar and garnish with berries.
